What a starter actually is

A jar of flour and water where two kinds of tiny creatures live together: wild yeasts and lactic acid bacteria. They were already on your flour and in your kitchen; all you do is give them food and time. The yeasts make carbon dioxide, and that gas is what lifts your bread. The bacteria make acid, which gives you the flavour and keeps unwanted guests out. Feeding means: take some out, and add fresh flour and water. That's all it is — and everything you read about sourdough from here on is really about timing exactly this a little better.
