Why your starter goes quiet around day four

Almost every new starter bubbles away on day one and two, and then falls silent. That's the moment most people decide it has failed and tip the jar out. What's really happening is a changing of the guard: the first burst comes from bacteria that don't stick around, and the yeasts you'll actually bake with need more time. Keep feeding at your set time, and move it somewhere warmer if your kitchen sits below 20 degrees. Somewhere between day six and day ten it comes back — it nearly always does.
